STORY of BABAS

The origin of the cake named « Baba » goes back to 1740. The cake is a combination work of Stanislas Laczinski (1677-1766) who was the king of Poland and the Duke of Lorraine, Louis XV’s father-in-law. The story says That Stanislas Leczinski had the idea to add rum on a kouglof cake then to fill it with whipped cream.

He was fond of reading the fairy tales “the Arabian Nights stories.” He named his cake from the hero of one of the story “Ali-Baba”. A little afterward, we had the idea to add some syrup flavored with rum to the cake. It seems that idea belongs to a Polish pastry man called Stohrer who started his business in Paris by 1836, in his shop named “AU BABA”.
